Valencia is the home of it. A good one is great. Bad ones not so much….. Especially very smokey ones 🤮🤮 (I have been judge a few times at our local fiesta "paella concurso" competition). After 45 in 1 1/2 hours you learn a bit….. 🤯 If anyone want a good restaurant here I can recommend a few!
